摘要註:	2018年台灣將邁入「高齡社會」，面對快速成長的老年人口，長照政策更顯得重要，而擁有強健體魄是健康老化的必備條件，均衡飲食與營養將是首要關鍵。長照政策及社區關懷據點已多年施行老人供餐，但礙於經費不足、人力的短缺，老人供餐服務始終無法有效達標。因此，如何在有限的社會資源下，善用既存資源，是一項極富意義的挑戰，希冀為解決老人餐飲問題提供另一種選項。本研究遂以銀髮族人口數前兩名的嘉義、雲林為研究範疇，以生產理論及涉入理論為基礎，設計生產資源、涉入意願、背景變項為研究架構，以雲嘉地區國中國小學童午餐執行人員(午餐秘書)為問卷調查對象。研究發現:（1）受訪者對學校生產資源現狀均給予高度肯定。（2）受訪者對老人供餐意願呈現中度態度。（3）男性、研究所畢業、教師兼任午餐秘書、用餐人數50人以下、偏遠地區學校，有較高涉入意願。（4）生產資源與涉入意願呈現顯著性中度正相關，亦即完善生產資源將可有效提升涉入意願。（5）迴歸模型：Y=1.002+0.290B1+0.120A1+0.142*C4 (B1：午餐烹飪設備完善功能實用、A1：廚房工作人員可適時調度、C4：增加用餐人數能降低午餐成本、Y：涉入意願)。揭櫫可從設備實用性、人力支援度、供餐成本等關鍵要素兼籌並顧，同步施為，以有效提升涉入意願。研究建議:（1）給予執行人員適當職位與誘因，提高承辦意願。（2）供餐方式應多元化，符合社區居民需要。（3）提升重要性知覺，強化參與執行意願；羅列關鍵指標可供主管機關研訂策略施為，完善老人供餐服務機制。

In light of the rapid population aging, it is particularly important to formulate long-term care policies. Having good health is a prerequisite for healthy aging, while nutrition and balanced catering will be the primary key. Long-term care policy and community care locations have been providing catering to the elderly for many years now, but with the dilemma of limited manpower and financial, it is not perfect. Therefore, how to maximize limited resources is a meaningful challenge. This article would like to provide another option for senior meal delivery.In this study, based on the theory of production theory and involvement theory at its base, our research considers production resources, willingness to participate, and other background variables. The main target respondents of our questionnaire were the secretaries in charge of the lunch staff at elementary schools in the Yunjia District. Our study provides the following conclusions:（1）The respondents all expressed strong approval of their schools’ production resources.（2）The respondents showed reserved interest in providing meal services to elders.（3）Men, graduate degree holders, teachers that double as lunch secretaries, less than fifty of the customers at the cafeterias, and remote area schools generally expressed higher interest in participating.（4）Production resources and willingness to participate were seen to be positively correlated. In other words, improving production resources effectively increases willingness to participate.（5）Regression model : Y=1.002+0.290*B1+0.120*A1+0.142*C4 （B1: functionally and practically improving the lunch cooking facilities; A1: scheduling the kitchen staff to work at appropriate times; C4: increasing the number of customers can reduce the cost of meals; Y: willingness to participate）。 clearly the functionality of facilities, the level of support from workers, the cost of meals served, and other crucial factors can be synchronized to effectively increase willingness to participate, and complete the service mechanisms necessary for providing meals to the elderly.This article suggests that:（1） To promote service intention, give executive staff a proper position and incentives;（2） Diversify senior meal delivery service to meet the needs of residents;（3） Raise awareness, boost motivation and analyze data for policies formulation to provide more complete senior meal delivery service.
