摘要註:	.本研究旨在探討廚師工作壓力、休閒調適與工作績效之關係，並探討不同背景變項之廚師工作壓力、休閒調適與工作績效之差異情形。本研究採問卷調查法為資料蒐集之工具，以台中市廚師業職業工會會員為對象選出所需樣本。本研究採便利取樣，以google線上問卷的形式發放，共計回收535份問卷，剔除無效問卷35份，有效問卷為500份，有效回收率達93.5%。所得資料經描述性統計、獨立樣本t檢定、單因子變異數分析、皮爾森積差相關檢定與多元逐步迴歸分析進行資料分析，結果如下：本研究以男性、年齡介於41~50歲、婚姻狀況為已婚、教育程度以高中（職）、從業年資以16~20年及平均月收入30001~55000元居多數；廚師個人背景變項對工作壓力、休閒調適與工作績效有顯著影響；工作壓力、休閒調適與工作績效有顯著相關；休閒調適「舒緩身心式休閒」、「改善情緒式休閒」與「友伴式休閒」可有效預測工作績效。最後根據研究結果，提出實務之策略及建議。

This research used questionnaire to investigate. In this study, we use chef craft union members' of Taichung city for the researching object.This study by convenience sampling, the questionnaire with the google form to the rural winery customers and we took 535 questionnaires were recovered, remove the invalid questionnaires 35, and a total of 500 valid questionnaires were obtained, so that, 93.5% efficiency. We analyzed and verified these examples with descriptives statistics, t-test, one-way ANOVA, pearson correlation Analysis, multiple stepwise regression analysis statistic methods and conclude the main research conclusions as following:Among chef craft union members', more were male and age from 41 to 50, marital status is married have an education of high schools, entire period of actual operation 16-20 yearsThey work in Service industry industries, the month may disposable income 30,001 to 55,000 NT. The demographic statistics resulted significant difference with work stress, leisure coping, and job performance . There were significant correlations among work stress, leisure coping, and job performance. The job performance can be predicted through “leisure palliative coping”,“leisure companionship” and “leisure mood enhancement” within the category of the leisure coping.
